A ruddy wine, with a shade varying from pure ruby to black tulip and often sustained. A fiery red colour, sometimes even garnet, tending towards dark purple. Ripe fruit with a spicy background is the common bouquet, with strawberry and raspberry, blueberry and blackcurrant. This complex of refined, mellow aromas evolves with age into cherry brandy, candied fruit, leather and fur, and game from the woods. On the palate, velvet and distinction, we find the fullness of the Pinot Noir of high school. A wine for ageing, of course, balancing richness and tannins, texture and architecture under a lively attack. The background may seem austere in its youth: it must develop its structure and fatness in bottle.
