Founded in 1824, Macallan was one of the first legal distilleries in Scotland. Situated on the banks of the River Spey, the country estate with the mysterious name "Easter Elchie House" sits gracefully on a hill near Craigellachie. Here, where the Spey runs its swift course in the shadow of the Grampian Mountains, the location and climate create unique conditions for whisky production. The distillery was first licensed by Alexander Reid in 1824. The Macallan works with companies in Spain who have extensive expertise in the entire cask making process - "from the selection of the tree to the completion of the seasoned casks" - carefully selecting and felling the oak trees in the forests of northern Spain, cutting and drying the oak staves before transporting them south for air-drying to further reduce the humidity. The barrels are then filled with sherry for 18 months before being transported to Scotland. There they are finally filled with the "New Make Spirit", the fresh distillate from The Macallan. Warm barley fields The Macallan Harmony Collection Amber Meadow is the third limited edition in an innovative annual series. It was created in collaboration with Stella and Mary McCartney to celebrate the lush and fertile soils of Scotland. The Whisky Mastery team have also taken inspiration from natural Scottish grasslands to create a single malt matured in both sherry oak and bourbon casks, strongly reminiscent of warm meadows and ripe barley fields with a rich, citrus-scented finish.
