Founded in 1824, Macallan was one of the first legal distilleries in Scotland. Situated on the banks of the River Spey, the country estate with the mysterious name "Easter Elchie House" sits gracefully on a hill near Craigellachie. Here, where the Spey runs its swift course in the shadow of the Grampian Mountains, the location and climate create unique conditions for whisky production. The distillery was first licensed in 1824 by Alexander Reid. The distillery initially ran as a sideline on the farm until it was taken over by Roderick Kemp in 1882, whose family brought the business to prosperity over the next 100 years. The Macallan works with companies in Spain that have extensive expertise in the entire cask production process - "from the selection of the tree to the completion of the seasoned casks" and carefully select and fell the oak trees in the forests of northern Spain, cut and dry the oak staves before transporting them south for air-drying to further reduce the humidity. The barrels are then filled with sherry for 18 months before being transported to Scotland. There they are finally filled with the "New Make Spirit", the fresh distillate from The Macallan. Complex & Rich Unique and rare whiskies from selected casks are married - and merge into a unique symphony of flavors in the Rare Cask. The whiskies used are matured in less than 1% of the Macallan Distillery's casks and provide a multi-faceted and incomparable taste experience.
