Don Papa is the Philippines’ Single Island rum, named after Papa Isio, a revolutionary hero and shaman from the island of Negros. The island of Negros is the largest of the Visayas islands, which form part of the Philippines. Regarded as the ‘sugar capital’ of the Philippines due to its high sugar production, it is where Don Papa rum is produced. The sugar cane is harvested locally, processed into molasses, and this ‘black gold’ is then distilled in column stills. Don Papa Single Island rum is then aged for over seven years in the foothills of Mount Kanlaon, in ex-bourbon and ex-Rioja American white oak casks. This long ageing process in a tropical climate gives it the desired depth of flavour, further refined by a final blending.
