AVERAGE AGE OF VINE 50-60 years old HARVEST Manually harvested in early September for Primitivo, mid-September for Negroamaro. FERMENTATION In large Slavonian oak vats AGEING Primitivo: 12 months in American barriques of Quercus Alba with steam-folded staves - Negroamaro: 12 months in medium toasted French barriques from the Tronçais area. Put together in large Slavonian oak barrels of 3000/5500 litres for 6 months and 6 months in bottle.
