Up to 2013 Teo aged this extraordinary oxidized beer in barrels that had previously hosted great rums or whiskies. Thereafter, he has tried to infuse his creature with the soul of a typically Italian product, which however has nothing to do with the world of food and drinks. The result is an extremely intriguing and captivating version of Xyauyù.
Xyauyù Kentucky 2018 has a clear color, reminiscent of a classic “monk’s tunic”, and has no head and no carbonation.
