Although spontaneous fermentation, Iris is very different from lambic.
Its bitter taste and slightly caramelized make a beer with complex nuances.
Beer quite original because unlike any other brewery products, it will not be brewed with 35% wheat as lambic. Composed entirely of pale ale malt types (which brings a more amber color to the beer), Iris keeps key characteristic of spontaneous fermentation, complex aromas and vinous taste.
