Nature of the soil : Clay-limestone and molasses of the Fronsadais. Yields: 21.5 hl/ha Vineyard management : - Maintenance of the soil on a parcel-by-parcel basis (grassing, ploughing), - First leaf removal in July, - Second leaf removal in September, - Terra Vitis label, HVE3 (High Environmental Value Level 3), EMS and Bee-Friendly certification Vinification : - Parcel-by-parcel selection by terroir, by grape variety and according to the age of the vines - Intra-cellular selection thanks to vigour and maturity maps established with the drone - Manual harvesting in small crates - Sorting on a table before and after de-stemming by 20 qualified people - Placing in wooden, stainless steel and concrete vats of small capacity (70hl), by gravity - Pre-fermentation maceration for 4 to 8 days at 8°C - Manual punching of the cap - Maceration time: Merlot from 28 to 32 days, Cabernets from 26 to 28 days - Aged for 16 months: 35% in new barrels, 65% in barrels of one wine.
